LUSH: Snacks

Ms. Kelly Cosgrove, Employee of the Years, has taken on a new title. That of Director of Snacks. Exciting news! Wine and food pairing, in the house of LUSH. We have been dreaming [yeah, food dreams] of this moment for quite some time and are thrilled to share with y’all!

LUSH West Town has launched the wine bar portion of the shop, and now has simple but delicious small plates available to nibble. Cured pig parts and fermented milk products are the focal point of the menu, along with indulgently delicious small bites of pork rilletes, duckfat popcorn, fried chickpeas with truffle oil, a daily sandwich, hummus, and other seasonal options.  Owner Mitch Einhorn and Director of Snacks, Ms. Kelly Cosgrove, crafted a menu based on much research and tasting and personal experience. Edited. Tasty.  Ms. Kelly will keep the menu fresh and popping with flavor, while following the seasons and fresh market produce.

Small plate prices range from $2 to $16. Perfect for sharing. Or all for you!

And, for the moment, the wine bar is BYOB.  Thus, you are welcome to grab a bottle of wine or beer from the LUSH shop and come on over to snack and sip.  As we move forward with licensing, the wine bar will have a small by the glass selection of wines and six brews on tap.  Wine and beer menu will rotate along with the snack menu.

We have 8 bar seats, a communal table for 12, and couches and leather chairs for an additional 10 seats.  Yummy and fun.

LUSH: Secret Wine

I love contests. I am fairly competitive, and always love a good game and friendly challenges.  And, if wine is involved, all the better.  Thus, when Ms. Cara of Decant Chicago blog mentioned the Secret Wine contest, I just couldn’t resist.  Exhilarating!

The simple rules involved registering as one of the first 85 bloggers, eagerly awaiting 3 bottles of blind wine, and then voting.  At stake, a trip to France! Awesome. I am SO in. And game.

The wine arrived, re-bottled, re-corked, and labeled with ‘Secret Wine’ and a number.  Instructions were to guess the appellation. Just the appellation. Not the grapes, or the year, or the producer.  Seems simple, right?  Not so much.

After completing some very brief research into the host company, Clare de Lune, a French wine PR company, I surmised that the wines are most likely from the regions the company represents in France.  However, even with all that narrowing down and focus, it is still extremely difficult to pick just one. And, yes, I am also well aware that making assumptions when blind tasting is involved is risky business.

The contest is still running, but we have been encouraged to share, in detail, our tasting experience and reasoning process.  Much tasting.  Very fun.  And surprising.

One vote only. Apparently, all guesses thus far are not quite correct. So, the waiting continues while the remaining bloggers catch up and vote. Until then…the wines are still secret.

THE WIDE WORLD OF SAKE — rescheduled, stay tuned!
We are excited to welcome guest lecturer Mason Horowitz to LUSH to talk about all things sake! Mason works for Joto Sake, one of the premier sake importers to the United States. Joto is Japanese for ‘highest level’ and it quite aptly describes Joto’s producers as well as their aspirations as their importer. Joto’s breweries could also be described as jizake, or ‘local.’ They are located in different regions of Japan, produce their sake in small batches and primarily use locally raised rice. They have unique stories and contrasting flavors and styles. Joto makes a point to not only select the finest breweries, but also put an emphasis on educating the public on the oft-misunderstood sake. Join us as Mason takes us through the ins and outs of this delicious rice beverage and snag a bottle or two for your next BYO sushi excursion.

AUSTRALIAN WINE 101 — Sunday, August 1st

There is more to Australian wine than meets the eye. Between the mass-produced world of Yellow Tail and the cult-status stylings of Penfolds and Ben Glaetzer lies a whole world of terroir-specific, hand-crafted, artisinal wines that you don’t hear much about. Shiraz is the big name grape, but Australia also puts out some of the finest New World riesling, cabernet, chardonnay, grenache, and semillon. Australia is also a treasure-trove of experimentation: you’ll find such grapes as zinfandel, albarino, verdelho, pinot gris, and gamay being planted. There is much to know in terms of regions too: Barossa Valley might be the most famous, but the regions of Australia offer a case study in different climates and landscapes. From Hunter Valley to Margaret River, Adelaide to McClaren Vale, there are distinct regional differences around the country. The wines of Australia have gotten a reputation as being flashy and chock full of alcohol and fruit, but they can also display finesse, elegance, and a distinct expression of place and variety.

AMERICAN WHISKEY — Sunday, August 22nd
Scotch has certainly earned its spot at the top of the whisk(e)y hierarchy, with centuries of distillation and tradition, but American whiskey is nipping at its heels. Right now, if you haven’t noticed, there is a bit of an aged American whiskey shortage. No one knew ten — or even five — years ago that these spirits would be so popular! Bourbon and Rye are taking center stage in the American cocktail Renaissance, along with being many connoisseurs’ sippers of choice. We are also seeing incredible innovation — ‘single malts’ from Oregon and Colorado, wheat whiskey from Kentucky, and small batch ‘four grain’ bourbon from upstate New York, among others. It is an exciting time to be making and drinking American Whiskey, and there is much to know. We’ll go through the history of our homegrown spirits, how they’re made, and how best to drink them (this will be the most fun part!). Jump on the bandwagon, and discover what all the fuss is about.

VINOS DE JEREZ — Thursday, August 26th
The ultimate wine geek wine, Sherry — aka ‘Vinos de Jerez’ — is one of the most (if not THE most) misunderstood beverages on the planet. When I say Sherry, you think of something that Grandma drank or Mom added to her cooking. But there’s another side to these wines that the Spanish cognoscenti has been trying to tell us about for years. In the multitude of sherry types and styles lays a plethora of mind-blowing, meal-matching, and palate-pleasing wines. Slightly fortified, with varying degrees of oxidation caused by the mysterious and elusive yeast film called flor, vinos de Jerez are perhaps the most unique and site-specific wines made. Trust us on this one. This class will open you up to a whole world of wines you never knew existed.

MOLLYDOOKER (Aussie for left hander),  is a cheeky, fabulous winery in McClaren Vale, Australia, under the brilliant hands of Sarah and Sparky Marquis.  This dynamic duo is a remarkable husband/wife team that loves what they do and have fun doing it, and make wines that definitely exhibit that passion.  Wines are crafted with the ‘wow’ factor in mind, and each bottle is totally intent on shaking things up a bit.  Sparky created a specialized watering program and an entire new measuring system to better translate the science behind the big flavor punch and luscious textures of the Mollydooker wines.  Let’s get a bit messy and wild…

LUSH adores the punchy labels and indulgent wines of Mollydooker, and sent out a big, loud invitation to Sarah and Sparky to come on by, in person, and hang with the Lushes. It is an incredible honor to welcome Sarah and Sparky to the shop to not only share their wines with us, but also to teach us some of the secrets to blending great wine. This seminar is totally hands-on and folks will have the opportunity to actually blend their own wines under Sarah and Sparky’s guidance. So, join LUSH for a crash course seminar in blending (tasting, drinking, and nibbling) with Sparky. There will, of course, be plenty of  wine to sip on.  AND, in true LUSHified style, with will be throwing down and hosting a 4 course PIG ROAST, as well. Expect yummy, wine-friendly food (the menu will be all along the lines of meatmeatmeat and finger-licking good barbecue on the grill with all the fixins’). This seminar is going to be crazy fun and super informative, as well as tasty, and we really want y’all to come play with us! Shake up your routine, blend your own wine, and love learning.  EAT.  DRINK. Grab a few friends, your mom, or a hot date and get on down with Mollydooker.  This is education the fun way…casual, interactive, and extremely delicious. Craft Brewers Conference: New Beligum Brewery ‘LOVE’

So, one day, Lauren Salazar from New Belgium Brewery gave LUSH a ring.  She had grand plans to invite brewers, brew folk, and friends to a private ‘brewery only’ event right smack in the middle of the Craft Brewers Conference, the World Beer Cup, and copious amounts of public beer events.  She wanted pig.  And beer.  And good people.

Ms. Rachel Driver thought this was just the right kind of crazy idea that could be brilliant and amazing.

Thus, we schemed and scheduled, flew beer in from around the country and Canada, and threw on hella big shindig.  Drowning in beer required.  Special brews, delicious pigs and all sorts of super serious fun were to be had by all.  See the rundown below for a glimpse of the par-tay that New Belgium hosted with LUSH.

Sad Face

LUSH West Town has been in the works for quite some time.  From the ground construction takes a bit of time, apparently, and contractors and carpenters, painters, plumbers, and such are a rowdy bunch and take some cajoling to meet deadlines.  Throwing booze at them only helps so much, and my super sad face just didn’t do it.  So, it’s been an intense, battling struggle to restrain our anxiety and overflowing joy to be opening a new shop.  We are nearly spilling over…just waiting for the dear city to bestow the ultimate gift, the golden ticket of a liquor license.  I will absolutely holler at the top of my virtual internet lungs the moment that our status progresses. Oh please, oh please, oh please.

However, in the meantime, alas, I must unfortunately call a halt to our raucuous plans for Friday the 13th and kabosh the launch party until another date.  Do not fear, free wine, beer and snackies will be available when said party commences.  It will be a knee-slapping roof shaking good time.  We’ve got to break the new store in, of course.  So, NO go on the grand opening of Lush West Town this week.  If we do indeed procure said license, I will throw open the doors and welcome the thirsty, the seekers of knowledge and fun.

Please partake in the good times and show your support of our local little wine shop.  We are extremely thrilled to join the West Town neighborhood and the amazing local joints along the way…food, art, and a lively, smart drinking culture.  Pop in and say hi; get to know your Lushes.  And, we LOVE you.

LUSH Weekly Email: Blind Tasting

Oops, it happened again.  Posted here for your perusing pleasure…

I apologize profusely for the horrifying event of last week…you did not receive your weekly LUSH email.  GASP.  Apparently our email utility people were napping.  But, no worries, this is a fair representation of the information you missed last week, minus my suggestions for a glorious Memorial Day weekend, but I am sure y’all did quite well with partying and enjoying the beautiful weather!

P.S.  My coolest cousin, Ms. Alice, will be buzzing into town for a sweet visit with an old family friend, Ms. Lucy.  We all grew up together in the Ozark National Forest in Arkansas…running, climbing, playing in the mud and the garden, swimming, and delving into general mischief and mayhem.  They may be hanging out, causing trouble at LUSH next week!

Hoooweee, put it in my glass!

I am not so sure about y’all, but I am very tempted to slip off my sneakers, run around barefoot for a while, and go play outside.  Granted, any playtime deserves a nice, chilly bottle of pink or white wine.  Or a sixer of local pilsner.  Venture out to see us…we have bottles open to sample for (shhh!) free.  And, we are local, friendly, and like to share.

Hot times, summer in the city.

Is there anything better than Chicago in the summer? Cubs games, lake trips, biking trails, picnics in one of our hundreds of parks, swimming pools and sidewalk cafes keep the hope in our hearts during those long, lonely winter months. For me, personally, it’s knowing that my palate will once again crave white wine! Perfect, crisp, refreshing white wine. Hints of honeydew, airs of apricot, achingly acidic white wine captures the essence of summer weather. Lucky for me, I work at a wine store and have access to hundreds of delicious bottles just waiting to be chilled!

A little bit about me: I have a tendency to get very excited.  As a result I often get overwhelmed when the moment comes to make a decision.  I want to choose a bottle that best captures what I’m feeling at the moment and one that will, hopefully, agree with the palate of whoever I may be entertaining.  To keep my enthusiasm in check, I’ve created a list of “must drinks” for the summer. To further simplify things, I’ve separated it into categories.   Lists make everything better.  (more…)
